Pear and ginger compote

  • ½ cup Cristal de Caña sugar
  • 4 ripe pears, peeled and diced
  • ¼ cup water
  • 1 teaspoon of grated fresh ginger
  • 1 teaspoon lemon juice
  • ¼ teaspoon of cinnamon powder (optional)
Preparation
  1. In a saucepan over medium heat, combine the pears, sugar, water and ginger.
  2. Cook, stirring occasionally, until the pears soften and the mixture thickens, for about 25-30 minutes.
  3. Add the lemon juice and cinnamon (optional) and cook for a few more minutes.
  4. Remove from heat and let cool slightly.
  5. Serve the compote warm or cold, alone or with ice cream or yogurt.
