Ingredients
- ¾ cup Cristal de Caña sugar
- 6 slices of bread (better if it is a little dry)
- 2 cups coconut milk
- ½ cup shredded coconut
- 4 eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ teaspoon cinnamon powder
Preparation
- Preheat the oven to 180°C (350°F) and grease a baking pan.
- Cut the bread into small cubes and place them in the pan.
- In a large bowl, mix the coconut milk, sugar, eggs, vanilla, salt and cinnamon.
- Add the grated coconut and pour the mixture over the bread cubes, making sure that all the pieces of bread are well soaked.
- Let stand for 10 minutes so that the bread absorbs the liquid.
- Bake for 45-50 minutes, or until the pudding is golden brown and firm to the touch.
- Let cool slightly before serving.
