Coconut bread pudding

  • ¾ cup Cristal de Caña sugar
  • 6 slices of bread (better if it is a little dry)
  • 2 cups coconut milk
  • ½ cup shredded coconut
  • 4 eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon powder
Preparation
  1. Preheat the oven to 180°C (350°F) and grease a baking pan.
  2. Cut the bread into small cubes and place them in the pan.
  3. In a large bowl, mix the coconut milk, sugar, eggs, vanilla, salt and cinnamon.
  4. Add the grated coconut and pour the mixture over the bread cubes, making sure that all the pieces of bread are well soaked.
  5. Let stand for 10 minutes so that the bread absorbs the liquid.
  6. Bake for 45-50 minutes, or until the pudding is golden brown and firm to the touch.
  7. Let cool slightly before serving.
