Ingredients
  • 2 cups of Cristal de Caña sugar
  • 1 cup of crystallized fruits
  • 1 cup chopped almonds
  • 1 cup shredded coconut
  • 1 cup black raisins
  • 1 cup golden raisins
  • 1 cup cherries
  • 3 cups flour
  • 1 cup vegetable shortening
  • ½ cup orange juice
  • 8 egg whites
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • ½ teaspoon salt
Preparation
  1. Mix the coconut, raisins, crystallized fruits, cherries, and almonds in a cup of flour
  2. Whip the vegetable shortening with the sugar
  3. Add the vanilla, the remaining 2 cups of flour and the baking powder (alternating with the fire).
  4. Add the fruit coated in flour
  5. Add the whipped egg whites with salt until stiff
  6. Grease the baking pan and baking paper at 275ºF for 4 hours
