Ingredients
  • 2/3 cup of Cristal de Caña panela
  • 1 cup of oat flour
  • 1 cup of rolled oats
  • 2 eggs
  • 1 teaspoon of baking powder or baking soda
  • 1 cup of almond butter (you can use peanut butter)
  • ¼ cup of chopped walnuts
  • 1 teaspoon of cinnamon
  • 1 teaspoon of salt
  • 3 drops of vanilla extract
  • Chocolate chips
Preparation
  1. Preheat the oven to 180 degrees Celsius.
  2. Mix the butter, sugar, and eggs in a bowl.
  3. Add the vanilla, baking powder, cinnamon, and salt.
  4. Incorporate the previously sifted flour.
  5. Add the chopped walnuts, rolled oats, and chocolate chips.
  6. Form small balls with this mixture.
  7. Place these balls on parchment paper on the baking sheet.
  8. Flatten the balls and let them bake for 10 minutes.
  9. Remove them from the oven and let them cool on a rack.
  10. Optional: before serving, sprinkle a bit more panela over the cookies.
