Ingredients
- 1 cup of Cristal de Caña sugar
- 1 pound of dried beans
- 1 pound of diced sweet potatoes
- 1/3 cup of raisins
- 1 ½ cups of whole milk
- 2 cups of evaporated milk
- 1 cup of condensed milk
- 1 tablespoon of butter
- 2 cinnamon sticks
- 1 teaspoon of ground nutmeg
- 1 teaspoon of ground cloves
- ½ teaspoon of salt
Preparation
- Cook the beans over medium heat with plenty of water and the cinnamon sticks until they become soft.
- Reserve two cups of beans and blend the remaining ones with the same liquid used during the cooking.
- Strain and pour into the pot along with the beans you set aside in the two cups.
- Add the whole milk, the evaporated milk, and the condensed milk.
- Add the sugar and sweet potatoes.
- Add the butter, raisins, and vanilla as the beans start to thicken.
- Add ½ teaspoon of salt.
- When the mixture thickens, turn off the heat and sprinkle with nutmeg.
- You can serve them hot or cold.
