Ingredients
- 1 cup Cristal de Caña sugar
- 250 grams tamarind pulp (seedless)
- 1 cup water
- 1 teaspoon lemon juice
- Additional sugar for sprinkling (optional)
Preparation
- Soak the tamarind pods in hot water for 30 minutes. Then, remove the seeds and fiber to obtain the pulp.
- In a saucepan over medium heat, mix the tamarind pulp, sugar, and water.
- Cook, stirring constantly, until the sugar is completely dissolved, and the mixture begins to thicken (about 15-20 minutes).
- Add the lemon juice and continue cooking the mixture until it has a thick, sticky, jam-like consistency.
- Remove the saucepan from the heat and let the tamarind mixture cool slightly.
- When the mixture is cool enough to handle, use a spoon to take small portions and form balls or any other desired shape with your hands.
- If desired, you can coat the tamarind balls with more sugar.
- Let cool completely at room temperature and enjoy!
