Ingredients
- ½ cup Cristal de Caña sugar
- ½ cup softened butter
- 1 egg
- ½ cup applesauce
- 1 cup grated carrot
- 1 ½ cups wheat flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
Preparation
- Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
- In a bowl, whip the butter and sugar until the mixture is light and fluffy.
- Add the egg, applesauce and grated carrot, mixing well.
- In another bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt.
- Incorporate the dry ingredients into the butter mixture and stir until well mixed.
- Form small balls with the dough and place them on the baking sheet, flattening them slightly.
- Bake for 12-15 minutes, or until the cookies are golden brown around the edges.
- Let cool before serving.
