Ingredients
  • ½ cup Cristal de Caña sugar
  • ½ cup softened butter
  • 1 egg
  • ½ cup applesauce
  • 1 cup grated carrot
  • 1 ½ cups wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
Preparation
  1. Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, whip the butter and sugar until the mixture is light and fluffy.
  3. Add the egg, applesauce and grated carrot, mixing well.
  4. In another bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt.
  5. Incorporate the dry ingredients into the butter mixture and stir until well mixed.
  6. Form small balls with the dough and place them on the baking sheet, flattening them slightly.
  7. Bake for 12-15 minutes, or until the cookies are golden brown around the edges.
  8. Let cool before serving.
