Ingredients
- 2/3 cup of Cristal de Caña panela
- 1 cup of oat flour
- 1 cup of rolled oats
- 2 eggs
- 1 teaspoon of baking powder or baking soda
- 1 cup of almond butter (you can use peanut butter)
- ¼ cup of chopped walnuts
- 1 teaspoon of cinnamon
- 1 teaspoon of salt
- 3 drops of vanilla extract
- Chocolate chips
Preparation
- Preheat the oven to 180 degrees Celsius.
- Mix the butter, sugar, and eggs in a bowl.
- Add the vanilla, baking powder, cinnamon, and salt.
- Incorporate the previously sifted flour.
- Add the chopped walnuts, rolled oats, and chocolate chips.
- Form small balls with this mixture.
- Place these balls on parchment paper on the baking sheet.
- Flatten the balls and let them bake for 10 minutes.
- Remove them from the oven and let them cool on a rack.
- Optional: before serving, sprinkle a bit more panela over the cookies.
