Ingredients
  • 1 cup Cristal de Caña sugar
  • 250 grams tamarind pulp (seedless)
  • 1 cup water
  • 1 teaspoon lemon juice
  • Additional sugar for sprinkling (optional)
Preparation
  1. Soak the tamarind pods in hot water for 30 minutes. Then, remove the seeds and fiber to obtain the pulp.
  2. In a saucepan over medium heat, mix the tamarind pulp, sugar, and water.
  3. Cook, stirring constantly, until the sugar is completely dissolved, and the mixture begins to thicken (about 15-20 minutes).
  4. Add the lemon juice and continue cooking the mixture until it has a thick, sticky, jam-like consistency.
  5. Remove the saucepan from the heat and let the tamarind mixture cool slightly.
  6. When the mixture is cool enough to handle, use a spoon to take small portions and form balls or any other desired shape with your hands.
  7. If desired, you can coat the tamarind balls with more sugar.
  8. Let cool completely at room temperature and enjoy!
