Yellow banana candy
- 1 pound of Cristal de Caña sugar
- 1 pound of grated ripe plantains
- ½ cup orange juice
- 2 teaspoons vanilla essence
- 1 teaspoon cinnamon powder
- 3 egg whites
- Put the orange juice, the grated plantains, and sugar in a saucepan
- Boil and stir continuously (avoid burning the bananas)
- When the mixture becomes thick, add the cinnamon and vanilla
- Beat the egg whites until stiff and add the sweet mixture
- Mix, beating vigorously, until well blended
- Serve when cold.
