  • 1/4 cup Cristal de Caña sugar
  • 1 cup rolled oats
  • 1 cup milk (it may be cow's milk, almond milk, coconut milk, etc.)
  • 2 eggs
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • A pinch of salt
  • Fresh fruits (optional, for decoration)
Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Lightly grease a baking pan of approximately 20x20 cm.
  3. In a large bowl, mix the oats and milk.
  4. Let it sit for about 10-15 minutes, so the oats absorb some of the milk and soften.
  5. Add the eggs, sugar, vegetable oil (or melted butter), and vanilla extract to the oat and milk mixture.
  6. Mix well until all the ingredients are fully blended.
  7. Stir in the baking powder and a pinch of salt and mix until well combined.
  8. Pour the mixture into the prepared baking pan and spread it evenly.
  9. Bake in the preheated oven for about 30-35 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the baking pan for a few minutes before cutting into portions.
  11. Serve the oatmeal cake warm or at room temperature, and if desired, garnish with fresh fruits such as strawberries, bananas, or blueberries.
