- 1/4 cup Cristal de Caña sugar
- 1 cup rolled oats
- 1 cup milk (it may be cow's milk, almond milk, coconut milk, etc.)
- 2 eggs
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- A pinch of salt
- Fresh fruits (optional, for decoration)
Preparation
- Preheat the oven to 180°C (350°F).
- Lightly grease a baking pan of approximately 20x20 cm.
- In a large bowl, mix the oats and milk.
- Let it sit for about 10-15 minutes, so the oats absorb some of the milk and soften.
- Add the eggs, sugar, vegetable oil (or melted butter), and vanilla extract to the oat and milk mixture.
- Mix well until all the ingredients are fully blended.
- Stir in the baking powder and a pinch of salt and mix until well combined.
- Pour the mixture into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the baking pan for a few minutes before cutting into portions.
- Serve the oatmeal cake warm or at room temperature, and if desired, garnish with fresh fruits such as strawberries, bananas, or blueberries.
